Easy Bread-less Parmesan Chicken

I don't have a lot of money. I also don't have a lot of time.... does this sound familiar to anyone else?

GAPS recipes need to be simple, quick, and feed lots of hungry mouths. But they also need to be made from scratch, with real foods, no grains or starches, and without preservatives or additives. Oh and they need to taste good enough for me to feel like I'm being treated like royalty in my own kitchen;) The queen. I am absolutely the queen at my own kitchen table (which, as it turns out, is actually the counter where I eat my dinner--typically from the pan--on the bar stool which I got secondhand... absolutely royalty, thank you.)

There are plenty of delicious whole foods recipes out there but they often require lots of steps and rare ingredients to make it taste good.. which simply does not coincide with my budget. I need whole foods, gut-healing meals that don't break the bank. This Chicken Parmesan GAPS diet recipe is just that. All you need is a few simple ingredients and a couple minutes to throw together an easy GAPS-friendly weeknight dinner.

So eat it up! And double what you need to. If it's not eaten for dinner, but it for lunch the next day!

Breadless Chicken Parmesan

2 lbs thinly sliced chicken breast
1 26 oz box chopped tomatoes
1/4 c tomato paste
1 1/2 tsp minced garlic
1 1/2 tsp onion powder
1 Tbsp dried basil
1 Tbsp dried oregano
1 tsp salt
1/2 tsp pepper
2 1/2 c shredded Parmesan cheese


Combine the tomatoes, tomato paste, garlic, herbs, and salt and pepper in a bowl.
Spread about 1/4 of the tomato mixture in the bottom of a 9x9 inch pan
Lay one chicken breast in the pan and spread about 1/4-1/3 c cheese on top of the chicken.
Spread a little bit of sauce on top of the cheese
Roll the chicken breast, tucking the open end underneath itself.
Repeat with the rest of the chicken breasts.
Spread the remaining sauce over all the chicken breasts and sprinkle with remaining cheese.
Place in the oven at 350 degrees for 30 minutes.
Turn the oven to broil and continue baking for another 5 minutes, or until the cheese on top crisps and starts to turn golden.

*if you really want to save time, skip tenderizing the chicken and rolling them with cheese and sauce. Just lay each chicken breast on top of 1/4 of the sauce, top with cheese and sauce.
